RESUMEN

Aqueous enzymatic extraction (AEE) of macauba pulp oil (MPO) was performed in this study with five commercial enzymatic pools. The chemical, nutritional, and thermal properties of the oils with high oil efficiency by AEE were evaluated and compared with mechanical pressing (MP) and organic solvent extraction (SE). Among the AEE processes, the pectinase pool (at pH 5.5 and 50 °C) exhibited the highest process efficiency (88.6 %). The oils presented low acidity values (0.4-3.1 %) and low molar absorptivities, indicating minimal oil degradation. Bioactive compounds, such as carotenoids, were found in MPO. The iodine index and the fatty acid profile of the oils revealed a high content of unsaturated fatty acids, particularly oleic and linoleic acids, with excellent nutritional scores, as evidenced by anti-atherogenicity and anti-thrombogenicity indices. These findings emphasized that AEE is an eco-friendly approach for extracting high-quality MPO with beneficial health compounds for food products.

RESUMEN

Peanut skin is a by-product rich in bioactive compounds with high nutritional and pharmaceutical values. The phenolic fraction, rich in proanthocyanidins/procyanidins, is a relevant class of bioactive compounds, which has been increasingly applied as functional ingredients for food and pharmaceutical applications and is mostly recovered from peanut skins through low-pressure extraction methods. Therefore, the use of green high-pressure extractions is an interesting alternative to value this peanut by-product. This review addresses the benefits of the phenolic fraction recovered from peanut skin, with a focus on proanthocyanin/procyanidin compounds, and discusses the improvement of their activity, bioavailability, and protection, by methods such as encapsulation. Different applications for the proanthocyanidins, in the food and pharmaceutical industries, are also explored. Additionally, high-pressure green extraction methods, combined with micro/nanoencapsulation, using wall material derived from peanut industrial processing, may represent a promising biorefinery strategy to improve the bioavailability of proanthocyanidins recovered from underutilized peanut skins.

Entende-se por fubá a moagem seca de uma mistura contendo o gérmen, tegumentos e porção amilácea da semente de milho. Devido à sua origem no campo e forma de processamento, pesquisas demonstram a incidência de sujidades nesta matéria prima. Dessa forma, o objetivo deste trabalho foi avaliar microscopicamente amostras de fubás comercializadas na cidade de Campo Mourão-PR. A pesquisa de matérias estranhas foi realizada segundo o método 1984 965.39 A (16.05.15) da AOAC com algumas modificações. Das 21 amostras analisadas, 6 apresentaram-se em desacordo com a legislação vigente, RDC nº 14, de 28 de março de 2014, Anvisa. Os resultados deste trabalho demonstram a importância da análise microscópica na avaliação da qualidade e atendimento das normas legais dos produtos alimentícios comercializados, uma vez que elementos estranhos encontrados não são detectados por outros métodos de análises, como microbiológicos e físico-químicos.
